Chef Erik Florjanc takes you on a nine-course culinary journey through Slovenia, inspired by recipes, ingredients and traditions rooted in different corners of the country.
Some were born from abundance, others from necessity. Some belonged to festive tables, others to everyday kitchens. Many have travelled quietly through generations.

A dried pear once ground into flour. A freshwater fish recipe whose roots reach back centuries. A festive dish known in one small part of Slovenia. Wild game, grains, plums, honey, local cheeses.
These are only glimpses.
Chef Erik does not recreate the past. He takes the essence of Slovenian culinary heritage and interprets it through a contemporary, refined and deeply personal culinary language. And we deliberately leave much of the menu untold.
Because every course has its own story – of a place, a tradition, an ingredient, a person or a moment in Slovenian life – and that story belongs at the table.

Wine as Part of the Story
Slovenia cannot truly be told without its vineyards. A carefully curated wine pairing accompanies the menu, selected to create a dialogue between the dish in front of you and the remarkable diversity of Slovenian wine. Each glass adds another layer to the journey – another landscape, another terroir, another story.
For guests who choose not to drink alcohol, we have created a dedicated non-alcoholic pairing with the same care and intention.
It is not a substitute for the wine experience, but a story of its own – composed to complement the flavours, textures and character of each course and to become an integral part of the evening.
